Culinary Director
As Culinary Director, you will collaborate closely with ownership and Chefs de Cuisine to enhance our brand and quality standards. Your primary responsibilities will include refining existing menu items, creating new recipes, supporting restaurant chefs and offering professional development opportunities to our cooks.
Core Responsibilities
Develop holiday specials and support weekly specials to ensure smooth workflow and cost-effective plates.
Manage and execute all events & caterings, on or off-site
Design seasonal local/organic vegetable dishes, managing training for execution.
Assist in airport menu development: consulting, collaborating & training on-site as needed.
Liaise with local farmers and purveyors for quality ingredients.
Manage recipe database, perform monthly inventory and contribute to cost management.
Assist where needed. You may be asked to help at any time in any of the kitchens or perform some daily task that requires a manager when no other manager is available.
You:
Possess sous chef-level management experience with fine dining background.
Have expertise in recipe development with enough practical general cooking experience to be able to develop a kitchen-ready recipe from an idea or concept.
Are highly skilled, have worked under top chefs in our industry and are highly creative.
You understand what it means to cook seasonally, can work with local farmers and can create recipes and menus that both fit our brand, concept and our ethos, with plates that dazzle, all with a mind for keeping costs in check.
Demonstrate excellent communication and inventory management skills.
Uphold high culinary standards and promote professional growth among team members.
Excel in creativity, cost control, and collaboration.
Maintain congeniality and professionalism in team management.
Pass background checks and airport badging requirements and have reliable transportation.
Day to Day
All of your research and development as well as prepping for specials and events will be done out of our beautiful commissary kitchen. You will need to get comfortable with all the restaurant kitchens via cross-training so that you can properly engage with and understand the parameters of each kitchen and craft specials that will work. Sometimes you will work in those kitchens as needs demand and assist in putting out special events. Additionally, you may work in the airport location from time to time as you assist with menu changes, training and consulting. You will have access to our offices for administrative work and will be issued a laptop. You will be held accountable for your productivity and must be able to manage your time well.

Compensation & Benefits
The minimum experience needed for this position will justify a minimum salary of 70K. Any salary above that would be negotiable based on the strengths of your particular experience.
